summer garden pasta

plus side of having a terrible garden this year? getting invited over to nate’s parents garden where they rubbed it in let us pick some of their produce from their thriving and beautiful garden. there’s just nothing like fresh beans, cucumbers, beets, peas, lettuce, tomatoes, zucchini, and peppers.

because they felt sorry for love us, they also had us over for a fresh garden dinner! we cooked on the grill. i love love love outdoor cooking. oh the dream of having an outdoor kitchen someday!

summer pasta

1 medium zucchini

1 medium summer squash

1 medium onion

2 tomatoes

1 pound pork sausage

8 cloves garlic

1/4 cup fresh basil (1/2 tbsp dry)

1/4 cup fresh oregano (1/2 tbsp dry)

2 cups dry white wine

1 cup cream

salt & pepper to taste

olive oil

grated asiago cheese

1 package whole wheat spaghetti noodles

chop the vegetables and herbs. brown pork sausage in olive oil. add onions and garlic. cook until onions start become translucent. add zucchini and summer squash and cook until tender. add white wine, cook until it’s reduced by half. add tomatoes and herbs, cook until wine has been reduced to 3/4’s (so there’s just a little liquid left in the pan). add cream. (meanwhile, boil the noodles). remove from heat. toss with noodles. top with fresh grated asiago. enjoy!

oh, and this fresh garden salad? i could eat it every day….
